Sugar Cream Pie

If you’ve ever lived in Indiana, you’ve probably had a Sugar Cream Pie. If you’ve never lived in Indiana, chances are you’ve never even heard of a Sugar Cream Pie. A Sugar Cream Pie, or Indiana Cream Pie, is a simple pie made with sugar, cream or half and half, butter, vanilla, and flour or cornstarch, that creates a custard-like filling. In Indiana, the most famous Sugar Cream Pie is made by Wick’s Pies in Winchester, IN, but Wick’s may have some competition with this recipe. This recipe is always a huge hit, and I’ve been told it tastes as good or better than a Wick’s.

Sugar Cream Pie                                       Serves Approx. 8

Ingredients:

9 inch pie crust, baked

4 Tbsp cornstarch

¾ cup sugar

4 Tbsp melted butter

2 ¼ cup half and half

1 tsp vanilla extract

2 Tbsp melted butter

½ tsp ground cinnamon

Preparation:                                                                                                                                                                                                                                                                                       In a sauce pan, mix cornstarch and sugar. Add 4 Tbsp butter and the half and half and cook over medium high heat until thick and creamy. Do NOT stop stirring! Once thickened, remove from heat and add vanilla.

Preheat broiler to high.

Pour mixture into pie crust. Drizzle 2 Tbsp butter over the top and sprinkle with cinnamon. Put under broiler until butter bubbles, watch VERY carefully. It will only take 20 to 30 seconds to bubble. A minute will burn it.

Cool and refrigerate several hours or overnight.

Note: If mixture does not thicken while cooking, raise temp a little and keep stirring. It will thicken.
